Strawberry Smoothie Chia Pudding

Chia seeds are tiny powerhouses packed with protein, fiber and Omega-3. This combination of chia pudding and fruit smoothie is perfect for a healthy, on-the-go breakfast or snack.

 

Ingredients:

2 cups unsweetened coconut milk

1/3 cup chia seeds

1 tsp vanilla extract

1 Tbsp honey (maple syrup or another sweetener may be substituted)

1 cup frozen strawberries

2 bananas

1/4 cup coconut water (or as much as needed to get the proper smoothie consistency)

Topping of choice (Fruit, nuts, granola, shredded coconut)

Directions:

Add coconut milk, chia seeds, vanilla, and honey to jar. Shake well to mix. Refrigerate for at least 4 hours (overnight is best).

Once the chia pudding is set, blend together strawberries, bananas and coconut water. Pour on top of chia pudding. Add topping of choice.

Enjoy!
