My favorite quinoa recipe

I’m obsessed with quinoa! It’s nutrient-rich, high in protein, and gluten-free, making it an ideal staple in my diet. With it’s slightly nutty flavor, there are so many tasty ways to enjoy quinoa. Here is one of my favorite recipes.

Quinoa Greek Salad

Ingredients

1 cup quinoa

2 cups chicken broth

1 cup diced tomatoes

1 cup diced cucumbers (I prefer Persian cucumbers)

1/2 cup diced red onion

2 ounces crumbled feta cheese

1 1/2 tablespoons olive oil

1 1/2 tablespoons red wine vinegar

half of a lemon

1 clove minced garlic

salt and pepper to taste

Directions

Bring broth and quinoa to a boil in a saucepan. Reduce heat to low, and simmer until quinoa is tender and broth has been absorbed, about 15 minutes. Transfer quinoa to a large bowl and set aside to cool, 10-15 minutes. Once cooled, fluff with a fork.

Mix tomatoes, cucumbers, onion, and feta into quinoa. Mix olive oil, vinegar, lemon and garlic. Toss into quinoa mixture. Season with salt and pepper and toss to coat. Chill in refrigerator for at least one hour. (Makes 4 servings)
